- 2 tbsp Vassilakis Estate early harvest olive oil (plus more for drizzling)
- 2 garlic cloves, minced
- 1 tsp dried oregano
- Salt & black pepper
- Lemon wedges (optional)
- Fresh bread & red wine (to serve)
